Cottage Food Compliance & Transparency
Last updated: October 2025
Loaf + Lore operates under the Nevada Cottage Food Program in compliance with NRS 446.866 and NAC 446.854, which allow certain non-potentially hazardous foods to be produced and sold directly to consumers from a home kitchen.
This page exists for transparency. It outlines how we handle food safety, labeling, and recordkeeping – and how our little kitchen stays squarely within Nevada’s cottage food laws.
Cottage Food Registration
Business Name: Loaf & Lore
Owner/Operator: Mel (Miqehl) Martensen-Bayfield
License Type: Nevada Cottage Food Registration

Cottage Food Exemption Statement
Under NRS 446.866, Loaf & Lore produces all qualifying foods in a home kitchen that is not inspected by the Nevada Division of Public and Behavioral Health.
Every product label and display includes this disclosure:
“This product was prepared in a kitchen that is not inspected by the Nevada Division of Public and Behavioral Health.”
Cottage food laws allow direct-to-consumer sales only — no wholesale, no shipping, and no third-party retail.
Approved Cottage Food Categories
We bake and package foods defined as non-potentially hazardous under Nevada law. These include:
Breads and loaves (plain, sweet, or flavored)
Cookies and pastries without cream or custard fillings
Dry mixes, croutons, and snack-style baked goods
Shelf-stable jams, jellies, and fruit preserves (pH tested and verified for safety)
Every recipe is reviewed for compliance before baking begins.
Product Label
Labeling Standards
Each Loaf & Lore product includes a label showing:
Business name and address
Product name
Ingredients in descending order by weight
Allergen declaration (per FDA standards)
Net weight or quantity

The required Nevada cottage food disclosure

Food Handling & Sanitation
Though our kitchen is exempt from inspection, we hold ourselves to professional standards modeled on the FDA Food Code and NAC 446.
Our practices include:
Handwashing before and during food prep
Hair restraints and clean attire
Sanitizing all work surfaces
Separating baking from household activity (and curious pets)
Using sealed, food-grade containers
Controlling temperature and humidity during proofing and storage
All utensils and bakeware are dedicated solely to Loaf & Lore during production.
Ingredient Sourcing
We buy from trusted commercial suppliers and verify every ingredient for freshness and quality.
You’ll never find unpasteurized dairy, fresh meat, or anything outside the approved cottage food list in our bakes.
Storage & Distribution
Products are cooled, packaged, and labeled immediately after baking.
Finished goods are stored in clean, dry, temperature-controlled areas.
Sales are by appointment only, for direct pickup.
We do not ship, deliver, or wholesale under the cottage food registration.
Allergen & Consumer Notice
Our products may contain or come into contact with wheat, eggs, dairy, nuts, soy, or other common allergens.
We take precautions to avoid cross-contact, but a completely allergen-free environment cannot be guaranteed.
Upcoming Legal Change: AB 352 (Cottage Food Law Expansion)
In 2025, Nevada passed Assembly Bill 352, expanding the state’s cottage food program. The new law:
Raises the annual gross sales cap
Permits online and phone orders
Allows shipping and delivery via third-party platforms
Transfers oversight from Public Health to the Department of Agriculture
These changes will take effect once the implementation schedule is finalized.
When AB 352 becomes active, we’ll update this page — and our operations — accordingly.
